14 February | Sebastiaan Broeders | Netherlands
Sebastiaan Broeders, born in the Netherlands has been in the kitchen since the very young age of 13. His father ran a restaurant and young Sebastiaan jumped in one day when one of the sous-chefs didn’t show up for work. Since that day, the passion for cooking never stopped.
But Sebastiaan had an even bigger passion and that was to travel. After spending many years in various Dutch top-class restaurants, Sebastiaan traded the knife for the backpack and started on a trip around the world. His travels took him to Asia, Australia and Africa, but he never got around the world, he got stuck in Namibia, where he fell in love with the country and today runs his own restaurant in the centre of Windhoek: The Old Continental.
From his travels he was influenced especially by the Asian flavours and spices and that is one of the many things you will pick up in the great dishes he plans to present at Epacha during his Gourmet Getaway weekend.
His weekend is scheduled around Valentines Day, the 14th of February and Sebastian plans to play with a few aphrodisiacs in his menu to spice up the evening even more.
20 March | Peter Hoch | Namibia - Germany
The only Namibian-born Chef in the list of our four top Chefs is Peter Hoch. Born in Namibia but skilled and trained in some the top Hotels & Restaurants in Cape Town and Germany.
Since his return from Germany, Peter has put many great achievements on his cv. First he was head-chef at GocheGanas Lodge, later he was manager of the Am Weinberg Restaurant and four years later he found himself in the Caprivi on the Chobe River as chef of the luxury Impalila Lodge.
When he returned to Windhoek a couple of years ago he opened his own Catering Business, Kitchen Cowboy and only last year he opened the very successful Corner of 62nd – House of Good Food in Windhoek.
Peter today still cooks with many influences from the days he spend in the top kitchens in Germany and he plans a very creative and inventive 5-course dinner during your stay at Epacha on his weekend!
Today Peter is the proud owner and Chef at Corner of 62nd in Bismarck Street in Windhoek.
For the Epacha Gourmet Getaway he plans to cook up a storm with the best of the Namibian produced ingredients. Peter’s Favourite Kitchen saying: “If you can’t stand the heat, get out of the kitchen” – very much applicable in Namibia!
24 April | Louis Fenaux | Belgium
Louis Fenaux, was not so long ago still the Executive Chef for Epacha Lodge, he is a big man that loves great food. His passion for only the best ingredients and unique tastes have been guidelines for Louis throughout his career at various top Belgian Michelin-Starred restaurants.
Before Louis chose to work in the beauty of the Nambian nature, he was a chef at the “’t Hof van Cleve”, rated one of the top 10 best restaurants in the world. (Nr. 3 in the world in 2014)
Today, still inspired by the finesse of Micheline-starred cuisine, Louis combines his Love for Fishing at his own Fishermans Guesthouse in Hentiesbaai, where he prepare the freshest produce from the Atlantic Oceaan, mostly also caught by himself.
For his 5-course Dinner at Epacha, Louis plans to bring some of the best and freshest catch of the day from Hentiesbaai to your plate, and this accompanied with a few typical Belgian-inspired dishes.
1 May | David Thomas | French
The Media call him “the best Master Chef in Namibia” as he had already won this title in 2010, 2011 and 2013, and who was awarded the “best South African Master Chef” title in September 2013!
David Thomas, originates from France but owns his own restaurant today in Walvisbay: “Lyon Des Sables”
David, could you tell us how the Lyon des Sables was founded?
It started off as a joke between friends with Virgile Meiller, my best friend who is also a Vatel alumnus, which then changed into a serious discussion and turned into a real project. We arrived in Windhoek in 2009 and set up a joint partnership. We have a small team of ten: six in the restaurant and four in the kitchens, including an assistant chef, a cook and two people to wash dishes. You know, it’s really hard to find competent and qualified personnel here! I personally cook every day. I always have a short sourcing circuit to guarantee fresh local produce to my customers. It’s a huge challenge as there is no way to tell how many customers we will be serving in any given day
